Title: Breakfast Calzone

BREAD MACHINE CALZONE DOUGH
  Will work in two cup or
  Three cup capacity machines
INGREDIENTS FOR DOUGH
1 1/2tsActive dry yeast
3cBread flour
1tsSalt
1/2tsWhite sugar
1cWater
  Plus
2tbWater
2tbOlive oil
FILLING
3lgEggs, lightly beaten
1lgLeftover Baked Potato
  Skinned and diced
1/4cChopped onion
1tbOlive oil
1tbBacos
3dsBlack pepper Or to taste
1/2cShredded Sharp Cheese
OPTIONAL
  Chopped green pepper
  Chopped tomato
  Chopped jalapeno pepper
  Other vegetables

DOUGH:

Place ingredients in bread machine in order manufacturer suggests. Have all ingredients at room temperature. ( I always warm up the liquid in the microwave before adding it to the machine) Set machine on dough cycle. When dough cycle beeps, remove dough from the pan and place on a lightly floured board. Let dough rest for 10 minutes.

Preheat oven to 400 degrees.

Roll dough into a six inch long cylinder. Cut dough into six equal pieces. Lightly sprinkle balls of dough with flour. Roll out each ball of dough into a thin seven inch circle. If dough springs back, let rest a few more minutes. This is a very "friendly" dough, it stretches nicely to form the calzones.

Place 1/6 of the filling (Without any optional vegetables - this measures out to about 1/2 cup per calzone). Place filling in the center of each circle. With your fingertip, wet the inside edge of the circle with water. Fold the dough over to make a half moon shape and seal. Fold the edge up and crimp so that the calzone is *well* sealed.

Place on lightly oiled baking sheet. Bake for 25 minutes or until golden brown. Remove from baking sheet and cool on rack. I always take a toothpick and poke vent holes in the top of the calzones as they are cooling.

Serve hot or cool and then freeze for later.

Freezes well. Can be microwaved then put in a toaster oven to warm up. Can also be taken along to work in the morning and will be defrosted by lunch time.

FILLING:

In fry pan, wilt vegetables for ten minutes in olive oil over low heat. Pour the beaten eggs and the bacos into the pan and stir mixture until eggs are set. Remove from burner and let cool. Stir in the shredded cheese. Set aside.

Follow directions above to form calzones.

This is one of our son's favorite take a long meals.
